3 ingredient sweet potato low carb breakfast muffins (dairy, grain, sugar free)

Sweet potato

Almond flour

Ground flaxseed

Pre-heat oven to 350 degrees. 
Chop the 
1 medium Sweet potato
into 1 inch chunks and boil for 20 minutes, or until soft.​
While the sweet potato boils, in a large mixing bowl combine the
2/3 cup Almond flour
1 tbsp Ground flaxseed
​and mix well. 
Drain the sweet potato, and mash into the flour mixture to make dough.
Spoon the mixture into a well greased muffin tin.
Bake for 45 minutes.
