You'll look forward to making these baked cinnamon sweet potatos for breakfast. Perfectly crispy on the outside, soft sweet and chewy on the inside. For those on a paleo or grain free diet, these baked sweet potatoes are an excellent replacement for grain based breakfast foods.

Cinnamon baked sweet potatoes

Sweet potato

large
Coconut oil
1
tbsp
Cinnamon
1
tbsp
Salt

Preheat oven to 350 degrees.
Place the 
1 tbsp Coconut oil
on a baking sheet and place in oven to liquify while oven preheats.​
Cut 
1 large Sweet potato
into half inch cubes.​
Remove baking sheet from oven. Add sweet potato cubes to baking sprinkle liberally with 
1 tbsp Cinnamon
2 tsp Salt
Stir and repeat until all sides of sweet potato cubes are coated in oil, cinnamon and salt.
Bake for 40 minutes, stirring occasionally.
