Stuffed cabbage rolls are a great satisfying low carb dinner. While they might look complicated, making cabbage rolls is quicker than you might think. This easy stuffed cabbage rolls recipe use quinoa instead of the usual rice - we prefer the finer texture of the quinoa.

Easy stuffed cabbage rolls with quinoa

Quinoa

Water

Cabbage leaves

Bring
1 cup Water
​to boil in small pot. Add 
1/2 cup Quinoa
​and stir. Reduce heat, cover and simmer for 15-20 minutes, or until most of the water is absorbed.
In a saucepan, bring
1/2 cup Water
​to boil. Add
8 Cabbage leaves
​and cook for 2-5 minutes, or until leaves are softened.
Chop the 
1 small Onion
​finely.
Once the quinoa is cooked, add it to a large mixing bowl, along with the chopped onion, and
1 lbs Ground beef
1 Egg
1 tsp Salt
1/4 tsp Black pepper
mix until ingredients are combined.
Divide the beef mixture among the cabbage leaves, rolling and securing with a toothpick if necessary. Place cabbage rolls in a large saucepan or skillet.
Pour 
1 1/2 cup Tomato sauce
1/2 cup Water
​over the cabbage rolls. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring often.
