These pork carnitas melt in your mouth like candy. This recipe works best with fattier cuts of meat - most of the fat will melt off the pork, but will leave the outside crispy on the outside. If you like recipes for ketogenic diet, this is a great keto meal idea.

Melt in your mouth crispy Pork Carnitas

Boneless pork (loin, shoulder, etc)

Heat oven to 300 degrees F.
Cut the
2 pounds Boneless pork (loin, shoulder, etc)
into large chunks (~ 2 inch)​
Chop the 
1 medium Onion
​into large chunks.
In a large cast iron pot or dutch oven, combine the pork and chopped onion with the
2 pounds Boneless pork (loin, shoulder, etc)
1 tsp Salt
1 tsp Cumin
1 tsp Maple syrup
2 cup Water
​and place in oven. Cook for 2 hours.
Remove pork from pot and place in bowl. Set oven to broil.
Place the pot with the liquid mixture on high heat and bring to a boil. Reduce heat and simmer for 20 minutes. 
With a fork, pull pork apart, into 1 inch pieces. Gently place the pork in the liquid mixture and slosh until pork is coated. Transfer pork to cookie sheet, greased or lined with parchment paper.
Broil for 5-7 minutes, until browned with crispy edges. Flip pork pieces and and broil for another 5-7 minutes. Serve hot.
