This one pot lentil daal is a quick, easy and satisfying meal. Lentils are cheap, filling and healthy, and an excellent staple for those on a paleo or gluten free diet. The tumeric adds anti-inflammatory properties. Try it with a garnish of chives or sour cream.

Red lentils, dried

Heat
2 tbsp Cooking oil
​in a large pot over medium high heat.
Dice the 
1/2 medium Onion
and add to the pot. Saute for 2 minutes.
Mince the 
1 clove Garlic
1 tbsp Ginger
2 cup Greens (kale, spinach, etc)
​and add to pot, along with the
2 tsp Tumeric, ground
1 tsp Pepper
1/2 tsp Salt
​Stir well and saute for 1 minute.
Add the 
1 1/2 cup dried red lentils
4 cup Water
​and bring to a boil.
When water boils, cover, reduce heat and simmer for 30 minutes.
