This bread, a MixMeals original recipe, will meet almost any nutritional criteria, while still being delicious. The consistency is soft, moist, slightly chewy, and very satisfying, but strong enough to not fall apart when picked up. The dates add sweetness.

Paleo lentil flax date flat bread

Coconut oil

Lentil flour

Preheat oven to 350 degrees.
To liquify
2 tbsp Coconut oil
place in a 9 x 9 inch baking dish, and put in oven while it preheats.​
If you have dry whole lentils, instead of lentil flour, blend in a food processor or blender until lentils are the consistency of flour.
Chop the
3 pitted dates
​ into small chunks.
In a food processor or blender, combine the chopped dates with the
2 tbsp Coconut oil
2/3 cup Lentil flour
2 tbsp Ground flaxseed
1/4 tsp Sea salt
1 cup Water
​and blend until combined.
Grease a 9 x 9 inch baking dish, pour batter in, and smooth with a spatula.
Bake for 35 - 40 minutes, or until the sides of the bread start to pull away from the baking dish.
