Butternut squash and sausage skillet Hearty, satisfying and healthy Olive oil 2 tbsp Farmers or italian sausage 2 Allspice 1/2 tsp Black pepper 1/4 tsp Butternut squash 2 large Kale 1 cup Onion 1 large Garlic 2 cloves Nutmeg 1/4 tsp Salt 1/4 tsp Vegetable stock 1/2 cup Heat large skillet or pot to medium high Slice 2 Farmers or Italian sausage into pieces and place in skillet. Add 1/2 tsp Allspice and cook sausage until browned, about 5 minutes. Peel and slice the 2 large butternut squash into one inch cubes. Chop up the 1 cup kale Add to skillet the chopped butternut squash and kale as well as the 1 large onion 2 cloves garlic 1/4 tsp nutmeg 1/4 tsp salt and cook until butternut squash begins to soften, about 5 minutes. Reduce heat to medium. Add 1/2 cup vegetable stock and cover skillet. Cook until squash is tender, about 20 minutes.
