Butternut squash and sausage skillet

Butternut squash

Heat large skillet or pot to medium high
Slice
2 Farmers or Italian sausage
into pieces and place in skillet.
Add
1/2 tsp Allspice
and cook sausage until browned, about 5 minutes.
Peel and slice the
2 large butternut squash
into one inch cubes.
Chop up the
1 cup kale
Add to skillet the chopped butternut squash and kale as well as the
1 large onion
2 cloves garlic
1/4 tsp nutmeg
1/4 tsp salt
and cook until butternut squash begins to soften, about 5 minutes.​​​​
Reduce heat to medium. Add
1/2 cup vegetable stock
and cover skillet. Cook until squash is tender, about 20 minutes.​
